"In 1869, William Spurgeon climbed a tree to get a better look at the land he had purchased. In every direction for as far as he could see, were gently rolling hills covered with waist-high mustard grass. Never, in his wildest dreams, did it occur to him that, in just 20 years, that land would be dotted with numerous homes, busibesses, hotels and banks. Spurgeon was pleased with what he saw and named it Santa Ana.
"By 1886, Spurgeon's Santa Ana wasn't much more than a wide spot in the road. But that year a real estate boom hit the area, fueled by hordes of Easterners eager to pit down roots in what they had been promised was the west coast equivalent of the Garden of Eden. In just two years, Santa Ana 's population doubled. On just one day, 275 people made the grueling train ride from Los Angeles to Santa Ana to haggle over 71 available lot sites. By nightfall, every lot had been spoken for, and Spurgeon was $20,000 richer.
"As is the case in most real estate booms, speculation was rife. Tales of people making land deals that turned a 1000%profit in a few weeks' time were common. By 1888 after two years of ubprecedented growth, the boom abated. Santa Ana's upstart neighbor, Anaheim, petitioned Sacramento to declare it and the surrounding towns a county separate from Los Angeles, and designate Anaheim, not Santa Ana the county seat. Anaheim's actions worried Spurgeon, so he joined forces with another developer, James McFadden, to lobby the state legislature to create a new county and make Santa Ana the seat of government. Spurgeon and McFadden won and the county of Orange was born. Even so, real estate development continued to dwindle, and wasn't to get another boost until after World War I, when servicemen and their families began to relocate there. Then, when the depression hit, Orange County business in general, and real estate in particular, took another severe blow.
"In 1915, Spurgeon who had been the first chairman of the county board of supervisors, died without seeing his beloved Santa Ana regain its early boom-town status. However, Spurgeon's tree--uprooted to make way for parking in the downtown business district--was replaced by a marker and plaque identifying the spot as Orange County Historical Site No. 12, the birthplace of William Spurgeon's dream for the little town that grew."

"According to legend, it was an 18th century padre who introduced the flowering mustard plant to Southern California. Traveling from San Diego, northward along the mission trail of El Camino Real, he sowed a few mustard seeds here and there along the trail when he stopped to rest. This anontmous priest of good intentions litterally created a path of gold, stretching from the southern tip of California north to Santa Barbara.
"Unbeknownst to the well-meaning padre, his glorious path of flowering mustard would, within 50 years, become a bane to cattle ranchers and real estate developers alike.
"Flowering every summer, the bushy mustard plants spread like wildfire, transforming southern California's landscape into fields ablaze with gold - a spectacular panorama, but a view nontheless that chagrined cattlemen. The untamed mustard grew as high as 10 feet, making it an ideal blind for stray cattle to wander into while cowboys searched for them.
"Even when dried, the mustard was a problem for ranchers. The brittle, rustling stocks still provided camouflage for wayward cows. So much so, that at summer's end, neighboring cattle barons would pool their crews to make annual raids through the summer gold. In what became known as a "run through the mustard", horsemen would gallop through the fields, trampling the plants while rounding up the herd's mavericks.
"Whenever the mustard fields weren't being used for a friendly game of hide-and-seek with the cows, the herb was a major thorn in the side of real estate developers. When Santa Ana's founder, William Spurgeon, first took the notion of developing a settlement there, it was no more than a mammoth mustard field. So thick were the mustard plants that men on horseback couldn't see over the stalks. In order to negotiate travel, men on foot would lead, using hatchets to cut through the mustard forest. The clearing of the plants gave a new reality to the old saying of being able to "cut the mustard!"
"To lure settlers to his new city, Spurgeon issued the attractive offer to newcomers of purchasing two lots for the price of one, provided the buyer would clear both lots mustard plants. Notably, in what is now a high-rent district, two lots on the corner of Fourth St. at Main originally sold for a mere $15.
"Eventually, California tamed the wild mustard. But the padre's good intentions can still be appreciated today -- for each year the southland is ablaze with summer gold. Source: Spur. Quar., Issue 46, Sept 1996 p367,368
